Okay, well, maybe this sandwich didn't save the WHOLE world, but it has sure made mine a heck of a lot better!!
The substitution being featured today is TURKEY BACON! So, if you're a vegetarian you may not have too much use for this blog post (I'll get to you guys later this week!), but for those of us who -- in the words of my best friend -- believe that "Bacon Makes The World Go 'Round" AND try to eat healthy, there is no greater gift from the meat processing gods than turkey bacon. Specifically, Oscar Meyer Turkey bacon (O.M.T.B.) which, in my humble opinion, is the best out there. (A dollar off? You're welcome!!)
I actually buy mine in a big four-pack box at Costco for a ridiculous price, like a little over 9 bucks for a four-pack, so two dollars and change per pack. I think in the grocery store it's like $3.39, so you get a good savings AND you don't run out for awhile, which is why I like to buy in bulk!
"Play-Doh" bacon, as my husband not-so-affectionately refers to it, is such a great way to add that bacon flavor back into your favorite breakfast dishes and entrees without the guilt and artery-clogging that old-fashioned pork bacon delivers. My other secret weapon to adding bacon flavor is WildTree Foods bacon-flavored grapeseed oil, but that's a whole 'nother post all together!
Long and short of turkey (a/k/a "Play-Doh") bacon is that it won't get all crunchy and crispy like regular bacon, but if you fry it up in a small pan with Pam you get a good consistency in just a few minutes sans the splatter and fire hazard of the piggie variety. I personally think the flavor makes up for what it may lack in texture, especially if you're adding it to scrambled eggs or using it in The Breakfast Sandwich That Saved The World.
My other two favorite uses for turkey bacon are to shred and add to corn chowder, which you can make almost fat-free if you're careful with ingredients (more on that later) and LWBLTs. For those of you who have not yet joined the L.W. craze (lettuce-wrapped), get on board! How can you beat a BLT with no guilt? Get some big fat butter or iceberg leaves, schmear some ripe avocado, lay a thin slice of turkey and two slices of O.M.T.B., sliced tomato, salt and pepper and some more shredded lettuce and let your taste buds go for a fantasy ride to heaven while your thighs stay nice and lean! Jimmy John's will make your sandwiches L.W. for you, and even Carl's Jr. has the option of lettuce-wrapping their burgers -- if you must have fast food, try to make the best choices possible!
OK, so back to The Breakfast Sandwich That Saved The World...
2 slices O.M.T.B. (70 cal)
1 slice Tnuva Edam Low Fat Sliced Cheese (60 cal)
3 egg whites (I like S&P&G (garlic powder) plus tarragon and a splash of milk, pulsed in the Magic Bullet for ultimate fluffiness) (51 cal)
1 Thomas's Bagel Thin, Everything flavor (if you're really wanting to cut calories only use half and make it an open-faced sandwich) (110 cal for both halves)
as many tomato slices as you can fit on this and still stuff it into your mouth (add some to the side, if needed (22 cal)
Now, at 313 calories, you're pushing what I like to use for a calorie limit per meal, but this baby REALLY packs a flavor punch, and satisfies. If you eat one of these first thing, it will really stick to your ribs and you can have just a Greek yogurt for 130 cal for your mid morning snack and be right on track for total caloric intake by lunchtime.
I most often eat this delight to start a heavy workout day, or if I know I will be on the go most of the day and won't have a lot of good food options, because all of the protein and the satisfaction you get from this beauty will really keep you from making bad food choices later.
