Cinco de Mayo!


It's coming up fast and I, for one, am VERY excited to start planning menus for the weekend!  I just found an AMAZING chicken "tamale" casserole recipe on Pinterest that I will DEFINITELY feature ....


... but the pièce de résistance in my Mexican cooking is my homemade ceviche -- and so healthy, too!! 

My favorite time of year to make ceviche is the end of the summer when I have garden-fresh tomatoes, onions, jalapenos and cilantro -- WOW!  But ceviche is awesome any time.  I make mine with just shrimp, no other kind of seafood, and love to spend a couple of hours on this labor of love:  chopping tomatoes and onions, squeezing limes, adding, tasting, adding, tasting and then waiting till the next day to really get the full flavor of this amazing dish! 

I also just found a chicken soup recipe that I think I may make and the kids and I will try to bribe my husband into making some homemade tortillas -- best recipe ever from our friend Ginger who makes ALL of her tortillas from scratch . . . I'm getting hungry already for these delights, better get out there and do my run and get ready for the weekend of feasting!!
